| Spinach Salad w/Hot Apple Dressing
6 strips of turkey bacon 3/4 cup of apple cider 2 tablespoons of brown sugar 4 teaspoons of rice wine vinegar 1/4 teaspoon of ground black pepper 6 cups of washed and torn spinach leaves 2 cups of sliced mushrooms 1 medium tomato, cut into wedges 1/2 cup of thinly sliced red onion |

Heat medium nonstick skillet over medium heat until hot, add bacon and cook 2 - 3 minutes per side or until crisp, remove from pan. Coarsely chop 3 pieces, set aside. Finely chop remaining 3 pieces, return to skillet. Add apple cider, sugar, vinegar and pepper. Heat just to a simmer, remove from heat. Combine spinach, mushrooms, tomato and onion in large bowl. Add dressing, toss to coat. Top with reserved bacon. 6 servings.
