| Swedish Nuts
1 pound of shelled pecans 2 egg whites 1 cup of sugar a dash of salt 1/2 cup of margarine
Toast pecans in a 325ºF. oven until light brown. Beat egg whites until stiff. Fold sugar and salt into whites and beat until stiff peaks form. Fold nuts into margarine. Melt margarine in a 15 x 10 inch pan. Spread nut mixture over melted margarine and bake at 325ºF. stirring every 10 minutes. Bake about 30 minutes or until nuts are coated with light brown meringue and no margarine is left in pan. Cool . Yield about 4 cups |
