Lamb and Cabbage


Lamb and Cabbage

1 1/2 pounds of breast of lamb
2 pounds of cabbage
2 - 3 teaspoons of salt
10 peppercorns
8 potatoes
8 carrots
1 tablespoon of chopped parsley
melted butter

Cut the lamb into serving pieces. Slice the cabbage. Alternate the layers of lamb and cabbage in saucepan, sprinkling layers with salt. Sprinkle with peppercorns. Add water to cover. Bring to a boil, skim off foam. Reduce the heat. Simmer, covered, for 30 minutes to 1 1/2 hours or until tender. Place lamb and cabbage on serving plate. Arrange the potatoes and carrots on plate. Sprinkle with parsley. Serve with butter. Makes 4 servings
