| Minted Lamb Chops
4 large or 8 small lamb chops 1 small onion 1 clove garlic 2 tablespoons of parsley 3 tablespoons of mint 3/4 cup of lemon juice 3/4 cup of olive oil salt and pepper
Chop the onion and garlic very fine and combine well with the other ingredients except lamb. Dry the lamb, place it in a shallow pan and pour the marinade over it. Let it marinade for 4 hours and cook, uncovered in an oven preheated to 375ºF. for 35 minutes or grill on a charcoal grill. Either way, be sure to baste well while cooking.
Mint is a natural with lamb, but other herbs go well, too. Substitute rosemary, oregano or basil for rmint |
