| Golden Spring Lamb with Potatoes
one 5 -6 pound leg of lamb, boned Salt and pepper Garlic salt, optional 4 tablespoons of flour 2 tablespoons of melted shortening or salad oil 1/2 cup of water 10 medium potatoes
Trim the fat, tallow and membrane from lamb; rub with salt, pepper and garlic salt. Roll lamb in flour, brown in hot oil or shortening in large roaster. Cover and bake in preheated 375ºF. oven for 1 hour and 30 minutes. Add water, cover and bake for 30 minutes longer. Add potatoes, turning to coat with broth, cover and bake for 1 hour longer, adding water as needed. Make gravy as usual. Yields 8 - 10 servings
