| Slow Roasted Lamb Shanks
8 lamb shanks 6 cloves garlic 2 tablespoons of lemon juice 6 tablespoons of parsley 2 tablespoons of chives 1 teaspoon of rosemary 6 tablespoons of breadcrumbs 6 tablespoons of butter salt & pepper
Chop the garlic, parsley and chives and mix with the butter, lemon juice, rosemary, breadcrumbs, salt and pepper until you have a paste like mixture. Wipe the lamb dry and spread the paste evenly on the shanks. Let the meat absorb the seasonings for several hours or overnight. Roast on a rack in an oven preheated to 325ºF. for 45 minutes. Or if you charcoal them, put a metal skewer in each shank so you can turn them. |
