Low Calorie Pumpkin Muffins

1 cup of pumpkin
2 eggs
2/3 cup of instant non fat dry milk
2 teaspoons of pumpkin pie spice
1 teaspoon of cinnamon
8 packages of Sweet and Low
1/2 cup of grated carrots
6 tablespoons of flour
4 tablespoons of raisins
1 teaspoon of soda
1 teaspoon of vanilla

Combine dry ingredients. In separate bowl, combine beaten eggs and vanilla. Add pumpkin and mix well. Add dry ingredients, carrots and raisins. Spray muffin tin with Pam. Divide dough into 12. Bake at 350ºF. for 15 minutes.
