| | Baked Onions Vinaigrette
8 medium onions, unpeeled 1/2 cup of red wine vinegar 3/4 cup of olive oil 1 tablespoon of sugar 1/2 teaspoon of salt Freshly ground black pepper 1/2 teaspoon of ground mustard 1 bay leaf
Preheat oven to 400ºF. Line a shallow baking pan with foil. Arrange onions in pan. Bake, uncovered, 60 - 70 minutes or until fork tender. Carefully slip off outside skins and discard. Place onions in serving dish. Heat vinegar, olive oil, sugar, salt, pepper, dry mustard and bay leaf, stirring until sugar dissolves. Pour hot vinaigrette over onions. Serve warm or cold as an accompaniment to hot or cold meats. Makes 4 to 8 servings |
