6 Basil leafs
150 g Anchovies; 5 oz
2 dl Olive oil
Peanut oil
6 Garlic cloves; peeled
3 tablespoons of vinegar
Water; if needed

Instructions
Wash anchovies to remove salt. Place anchovies, garlic and basil in a small food processor. Process adding oil as for mayonnaise. Add vinegar and process 1/2 minute. If too thick add a little water. Chill Based on Barbara Kafkas " Party Foods"
Yields: 12 Servings
NOTES : Great with toasts or crudites.
