| Apricot Salad Ring
1 large can of apricots 1 package of orange Jell-O Orange juice 2 small packages of cream cheese 5 tablespoons of milk or cream 1 teaspoon of mayonnaise 3/4 cup of crushed pineapple |
| Drain the can of apricots. Puree the apricots. Dissolve the Jell-O in hot apricot liquid ( add enough orange juice to liquid to make 2 cups). Add 2 tablespoons of frozen orange concentrate to the pureed apricots. Pour half of liquid into ring mold. Let partially congeal. Soften 2 small packages of cream cheese with milk or cream. Add mayonnaise and pineapple. Spread over jellied mixture. Cover with remaining Jell-O. When set, unmold and serve on salad greens.
