| Caesar Salad
1 clove garlic 1 head Romaine, washed, dried and broken into bite size pieces 1 teaspoon of Coleman's dry mustard Salt and pepper to taste 3 tablespoons of olive oil 3 tablespoons of lemon juice 2 eggs, boiled for 1 minute 1 cup of freshly grated Parmesan cheese 1 cup of croutons |
| Rub salad bowl with garlic, discard garlic. Add Romaine, dry mustard, salt and pepper to bowl and toss well. Add olive oil and lemon juice and toss well again. Break coddled eggs over salad, toss again very thoroughly. Add grated Parmesan cheese, toss. Just before serving, add the crotons, freshly made if possible, toss well and serve.
