| Congealed Beet Salad
1 envelope of unflavored gelatin 1 cup of chopped beets 3/4 cup of beet juice add enough water to make 3/4 cup of liquid 1/2 cup of sugar 1/3 cup of vinegar 1 cup of chopped celery 1/2 teaspoon of salt onion to taste |
| Soak the beets in vinegar and sugar for 1/2 hour. Soak gelatin in liquid. Place all ingredients in saucepan and heat, being careful not to boil. Pour into pan or molds and chill in refrigerator. Serves 5 - 6
