one 3 ounce package of lemon Jell-O 1 cup of boiling water 3/4 cup of cold water 1 cup of mayonnaise one 12 ounce can of shredded corned beef 1 cup of diced celery 3 hard cooked eggs, finely chopped 1 small onion, finely chopped one 2 ounce jar of chopped pimiento, drained 3 hard cooked eggs for garnish
Dissolve gelatin in boiling water. Add 3/4 cup of cold water and chill until slightly thickened. Mix rest of ingredients and add to thickened gelatin, stirring well. Pour into lightly oiled 8 inch square pan. Chill until firm. Cut into rectangles. Serve on lettuce and garnish with egg slices, if desired.
