Fruit Salad with Curry Dressing
2 cups of coarsely chopped Red Delicious apples 2 cups of coarsely chopped Anjou pears 3 tablespoons of lime juice
1 cup of fresh orange sections 3/4 cup of red seedless grapes, halved 1/2 cup of peeled, sliced kiwifruit curry dressing
Curry Dressing: 2/3 cups of plain non-fat yogurt 1 tablespoon of honey 1 teaspoon of lime juice 1/4 teaspoon of curry powder
Prepare curry dressing: Combine all ingredients in a small bowl; stir well.
For fruit salad, combine first 3 ingredients in a bowl; toss well. Add orange sections and next 3 ingredients; toss gently. Spoon curry dressing over salad; toss gently to coat. Serves 6.
