Mexican Fruit Salad with Lime Dressing
1 small head of romaine lettuce, shredded 3 large oranges, peeled and sliced crosswise 1 papaya, peeled, seeded, and thinly sliced 2 cups of fresh pineapple chunks 1 cup of fresh strawberries, hulled 1/3 cup of flaked coconut 1 tablespoon of pine nuts, toasted lime dressing
Lime Dressing: 3/4 cup of sugar 3 tablespoons of water 3/4 teaspoon of grated lime rind juice of 1 large lime
Prepare lime dressing: Combine sugar and water in a small saucepan; bring to a boil, stirring constantly until sugar dissolves. Remove from heat; stir in lime rind and juice. Cool. Cover and chill thoroughly.
Place shredded lettuce on a large serving platter. arrange orange slices, papaya slices, pineapple chunks, and strawberries over lettuce. Sprinkle with coconut and pine nuts. Drizzle lime dressing over salad. Serve immediately. Serves 8.
