| Nippy Celery & Beet Salad
1 can of beets, diced 1 cup of beet juice one 3 ounce pkg. of lemon Jell-O 1/2 cup of cold water 1/2 teaspoon of garlic salt 1 1/2 tablespoons of horseradish 3 tablespoons of wine vinegar 1 teaspoon of grated onion 1/2 teaspoon of salt
1 cup of diced celery |

Drain beets, reserving 1 cup of juice. Bring beet juice to a boil, add Jell-O and stir until dissolved. Add water, garlic salt, horseradish, vinegar, onion and salt. Chill until partially set. Fold in celery and beets. Pour into molds. Chill until firm.
