| Stuffed Tomato Salad
4 large firm tomatoes, cored one 12 ounce can of corned beef, chilled 1/4 cup of mayonnaise 1 tablespoon of milk 1/2 teaspoon of Tabasco 1/2 cup of chopped celery 1/4 cup of chopped pepper 1/4 cup of chopped cucumber 5 pitted black olives, sliced
Scoop out some of seeded middle of tomato, score tomatoes in quarters, but do not cut through. Sliced corned beef into small cubes. Combine the mayonnaise, milk and Tabasco. Add celery, pepper and cucumber, toss. Add corned beef, spoon into tomatoes. Decorate with olive slices. Yields 4 servings
