| | Spinach Bacon Toss
1/2 cup of salad oil 1/3 cup of sugar 1 small onion, quartered 3 tablespoons of vinegar 2 teaspoons of prepared mustard 1/2 teaspoon of celery seed 6 slices of bacon 6 cups of torn spinach 1 cup of sliced fresh mushrooms 2 hard boiled eggs, chopped
To make dressing, in a blender container, combine oil, sugar, onion, vinegar, mustard and celery seed. Cover and blend until smooth. Cover and chill. In a skillet, fry bacon until crisp; drain and crumble. In a large salad bowl, combine spinach, mushrooms, eggs and bacon; pour dressing over salad. Toss lightly. Makes 4 servings |
