Scallop Sauté

Scallop Sauté

1 pound of fresh scallops, drained
3 tablespoons of butter or margarine, melted
1 cup of sliced fresh mushrooms
1 small onion, sliced and separated into rings
1/4 cup of dry white wine
2 teaspoons of fish and seafood seasoning blend
1 tomato, diced



Sauté the scallops in butter in a large skillet about 5 minutes or until tender, drain and set aside, reserving drippings in skillet. Sauté mushrooms and onion in drippings in skillet 4 minutes or until tender, drain and set aside, reserving drippings in skillet. Add wine and Fish & Seafood seasoning blend to drippings in skillet, cook over high heat until mixture is reduced by about half. Add the scallops, mushrooms, onion and tomato to drippings in skillet. Cook over high heat for 1 minutes or until heated. Serve immediately. Yield 3 - 4 servings
