Scallops au Gratin

2 tablespoons of butter or margarine
2 tablespoons of flour
1 cup of milk
one 12 ounce package of frozen scallops, thawed and drained
one 4 ounce can of mushroom slices, drained
1/4 cup of chopped green onion
1 teaspoon of grated lemon peel
1/2 teaspoon of salt
1/8 teaspoon of garlic powder
1/2 cup (4 ounces) of shredded Cheddar cheese
1/4 cup of fine dry bread crumbs
4 English muffins, split and toasted
8 tomato slices

Melt butter in a skillet. Stir in flour. Gradually add milk stirring until thickened and smooth.
Stir in scallops, mushrooms, green onion, lemon peel, salt, and garlic powder. Put into a 1 quart casserole.
Mix cheese and bread crumbs. Sprinkle over all.
Bake, covered at 325ºF. for 25 minutes or until mixture is bubbly. To serve, top each English muffin half with a tomato slice. Spoon scallop mixture over tomato. 4 servings
