Crab Florentine

3 tablespoons of butter
3 tablespoons of flour
1 cup of milk
1 1/2 teaspoons of salt
1/4 teaspoon of pepper
two 10 ounce packages of frozen, chopped spinach
3 hard boiled eggs, grated
1/2 cup of Cheddar cheese, grated
2 tablespoons of grated onion
1 cup of flaked crab meat
1/4 cup of cracker crumbs
2 tablespoons of melted butter



Make white sauce by melting butter, stirring in flour, milk, salt and pepper. Set aside. In a 9 x 13 inch glass baking pan, add the following in layers: The spinach that has been thawed and rained, the eggs, then the cheese, onion and crab meat. Pour the white sauce over it and sprinkle the top with cracker crumbs that have been mixed with the melted butter. Preheat oven to 400ºF. Bake for 10 minutes. Reduce the heat to 350ºF. and bake about 15 minutes longer. Serve with crackers
