Crab Cutlets

Crab Cutlets

1 tablespoon of butter
4 tablespoons of flour
1 cup of milk
2 beaten eggs
1 1/2 pound of crab meat
1 tablespoon of mustard
1 tablespoon of vinegar
1 tablespoon of bacon fat
1/4 teaspoon of cayenne
Salt and pepper to taste

 Cook butter, flour and milk to thick consistency. Add beaten eggs. Cool. Add crab meat which has been seasoned with mustard, vinegar, bacon fat, cayenne, salt and pepper. Shape into cakes or like chops. Dip in egg, then in cracker crumbs. Fry in hot oil (best in deep fryer). Drain. Serve with sauce of pickle relish and mayonnaise.
