Flounder Stuffed with Shrimp

Flounder Stuffed with Shrimp

6 flounder fillets
1 pound of shrimp, cleaned and coarsely chopped
2 tablespoons of margarine
1 tablespoon of vegetable oil
1 bunch of scallions, cleaned and finely chopped
1/4 teaspoon of cayenne pepper
Juice of 1 lemon
Salt and pepper to taste
3 tablespoons of bread crumbs
1/4 cup of dry white wine

Season the flounder with salt and pepper and sprinkle with lemon juice. Heat the margarine and oil in heavy skillet. add the scallions and cayenne. Sauté until soft but not brown. Add shrimp, seasoned with light salt and pepper and a little lemon juice. Sauté for 3 minutes. Add the bread crumbs, combine well and then remove from heat. Preheat oven to 350ºF. Spread shrimp mixture over each filet of flounder and roll up, place them in a buttered baking dish. Pour the white wine over them and cover with aluminum foil. Cook in preheated oven for 20 minutes. Put filets ion a heated platter and thicken the drippings with 1 tablespoon of butter and 1 tablespoon of flour combined. Pour sauce over stuffed fish before serving.
