| Chesapeake Bay Virginia Crab Puffs
1 pound fresh or 1 can (14.5 oz) of crabmeat 1 cup of mayonnaise 1/2 cup of grated onion 1 cup of cheddar cheese, shredded 1 tablespoon of lemon juice a pinch of salt 1 package of hot dog buns
In a large bowl, combine all ingredients except hot dog buns. Cut rounds from buns using a small cookie cutter or the rim of a juice glass, cutting 3 from each half of the buns. Spread crab mixture evenly on top of rounds. Broil or bake at 400ºF. for 5- 10 minutes. Makes 48 puffs.
Note: Puffs may be baked and frozen for later use. Before serving, reheat at 400ºF. for about 10 minutes
