| Deviled Crab
2 pounds of crab meat 4 eggs, separated 1/2 cup of melted butter 2 teaspoons of baking powder 1 teaspoon of salt 4 tablespoons of Worcestershire sauce 2 teaspoons of pepper 3/4 cup of cracker crumbs 2 cups of evaporated milk
Mix crab meat, egg yolks, butter, baking powder and seasonings. Soak cracker crumbs in evaporated milk, add to mixture. Fold in stiffly beaten egg whites. Place mixture in greased crab shells, cover with additional cracker crumbs. Bake at 350ºF. for 30 minutes. Yield: 12 servings
