| Virginia Deviled Crabs
1 tablespoon of chopped onion 1 tablespoon of chopped green pepper 1/4 cup of butter 2 tablespoons of flour 1 cup of rich milk or vinegar 1 teaspoon of salt a dash of pepper 1 pound of crab meat 2 eggs, slightly beaten 1/2 cup of bread crumbs |

Simmer the onion and green pepper in 2 tablespoons of butter until slightly brown. Add flour and milk, cook until slightly thickened. Add seasonings, crab and eggs. Fill crab shells with mixture, sprinkle with crumbs and dot with remaining butter. Bake at 450ºF. until thoroughly heated and slightly browned. Serve at once. Note: Celery may be used in place of onion or both may be used.
