| Crab Imperial
2 tablespoons of flour 1 tablespoon of butter 2 cups of milk 1/2 teaspoon of salt 1/8 teaspoon of pepper 1 egg, beaten 1/2 of a green pepper, chopped 1 pound of crab meat 1 pint of bread crumbs
Blend in flour with melted butter, gradually add milk, salt and pepper. Cook until thickened, stirring constantly. Stir a small amount of sauce into egg, add egg to hot sauce. Add pepper and crab meat, cook until smooth but do not boil, stirring constantly. Pour into casserole, cover with bread crumbs. Bake in moderate oven until brown. Yield 4 servings.
