| | Oysters En Brochette
8 slices of lean bacon, cut in half lengthwise, partially cooked, and drained 16 medium large fresh mushroom caps 3 dozen oysters, shucked 1 large red onion, cut into quarters, sections loosened 2 large firm fresh tomatoes, cut into quarters Salt and pepper to taste Oil for greasing grill
Wrap a bacon strip securely around each mushroom. Thread four 10 inch skewers alternately with oysters, vegetables and bacon wrapped mushroom caps. Add extra oysters as you thread. Sprinkle with salt and pepper to taste. Arrange skewers on oiled grill in single layer and grill for 3 minutes on each side or until cooked. Place skewers on individual plates and allow guests to remove food themselves. Yield : 4 servings |
