Pimento Crab Meat Strata Supreme

one 7 1/2 ounce can of Alaska King Crab, drained and flaked
1/2 cup of chopped celery
1/4 cup of chopped onion
3/4 cup of mayonnaise
a dash of ground red pepper
12 slices of white bread, crusts removed
Butter or margarine, softened
three 4 ounce jars of whole pimentos, each pimento cut in 2 or 3 large pieces
4 cups (1 pound) of shredded Swiss cheese
5 eggs
3 cups of milk
1 teaspoon of salt
1/8 teaspoon of pepper
1/4 teaspoon of dry mustard



Mix crab, celery, and onion. Blend in mayonnaise and red pepper. Set aside.
Spread both sides of the bread slices with butter. Place half the bread slices in a layer in a 3 quart shallow baking dish.
Arrange half the pimento pieces, half the crab mixture, and one third the cheese over the bread. Repeat layering, using remainder of the crab mixture, pimento, and second third of the cheese. Cover with reserved bread slices and sprinkle with the remaining cheese.
Beat together remaining ingredients until frothy and blended. Pour over all. Let stand 1 hour.
Bake, uncovered, at 325ºF. for 1 hour or until puffed and brown. If desired, garnish with pimento strips, green pepper strips, and sprigs of parsley. 6 to 8 servings
