| | Pickled Shrimp
2 1/2 pounds of shrimp 1/2 cup of celery leaves 4 teaspoons of salt 1/4 cup of pickling spice 2 large onions, thinly sliced 3 - 5 bay leaves 1 1/2 cup of vegetable oil 3/4 cup of vinegar 1 1/2 teaspoon of salt 2 1/2 teaspoons of celery seeds 2 1/2 tablespoons of capers, undrained 3 drops of hot sauce
Place shrimp, celery leaves, salt, and pickling spice in boiling water to cover, cook 3 to 5 minutes and drain well. Rinse shrimp with cold water, peel and devein. Place half the shrimp in a large shallow dish, top with half the onion. Repeat layers, place 3 to 5 bay leaves over top, and set aside. Combine the remaining ingredients, mixing well, and pour over layered shrimp and onion, cover and chill 24 hours. Yield 5 - 6 servings |
