| Shrimp Lasagne
1/2 cup of chopped onion 1 garlic clove, minced 2 tablespoons of butter or margarine two 8 ounce cans of tomato sauce one 6 ounce can of tomato paste 1/2 cup of water 1 tablespoon of basil 2 teaspoons of oregano 1/4 teaspoon of pepper 1/2 pound of lasagna noodles 12 ounces of cooked and cleaned shrimp 1/3 cup of sliced pitted ripe olives 2 cups (8 ounces) of shredded mozzarella cheese one 16 ounce carton of cream style cottage cheese 1/2 cup (2 ounces) of grated Parmesan cheese |

Sauté onion and garlic in butter in a saucepan. Add tomato sauce, tomato paste, water, and seasonings. Simmer 25 minutes. Meanwhile, cook noodles according to package directions. Add shrimp and olives to sauce. Layer half the noodles, half the mozzarella cheese, half the cottage cheese, and half the sauce in a 13 x 9 inch baking dish. Repeat layers. Sprinkle with Parmesan cheese. Bake, covered, at 350ºF. for 20 minutes. Remove cover and bake ad additional 15 minutes or until heated through. Let stand a few minutes before serving. 8 servings
