| Shrimp Toast
8 slices of whole wheat bread 8 ounces of frozen peeled and cooked medium shrimp, thawed 1 egg white 1 teaspoon of minced fresh ginger 1/2 teaspoon of minced garlic 1/4 teaspoon of salt 1/4 teaspoon of ground black pepper 2 tablespoons of minced scallions |

Preheat the broiler. Cut each slice of bread in half diagonally and arrange on a large baking sheet. In a blender or food processor, combine the shrimp, egg white, ginger, garlic, salt, and pepper. Process until smooth, scraping down the sides of the container as necessary. Transfer to a medium bowl and stir in the scallions. Spread on the bread and broil 4 inches from the heat for 3 minutes on until golden brown. Serves 4.
