| Cold Shrimp
2 pounds of medium shrimp, cleaned juice of 1 lemon or lime 1 teaspoon of salt 1 medium onion, sliced 2 cloves garlic, cut in half 3 tablespoons of cooking oil 3 tablespoons of lemon or lime juice 1/4 teaspoon of pepper a dash of salt
Sprinkle shrimp with lemon or lime juice and salt. Saute onion and garlic in 1 tablespoon oil until the onion is transparent. Discard garlic, remove onion to plate. Braise shrimp in flavored oil for 5 minutes or until pink. Combine 3 tablespoons of lemon or lime juice, pepper, salt and 2 tablespoons of oil. Arrange shrimp and onion in layers in deep bowl, pour sauce over each layer. Chill for several hours before serving. Yield 6 servings.
