| | Shrimp St. Jacques
2 pounds of shrimp, peeled and deveined 1/4 cup of butter 1/2 pound of mushrooms, sliced 1.5 cups of sour cream 1 tablespoon of chives, chopped 1/2 tablespoon of fresh parsley, chopped 1/2 teaspoon of paprika 1/4 cup of Parmesan cheese, grated salt and pepper, to taste
Sauté shrimp in butter for 3 minutes, add the mushrooms and sauté until tender. Blend in sour cream, parsley, chives, and paprika. Season with salt and pepper, to taste. Cook 5 minutes, stirring continuously. Spoon into 4 scallop shells, sprinkle tops with Parmesan cheese and broil for 3-5 minutes, until tops are golden. Serves 4. |
