| Mia's Corn Chowder
4 ounces of bacon, cut into bite size pieces 2 tablespoons of butter 2 cups of chopped onions 2 large potatoes 4 cups of chicken stock 1 cup of Half and Half 4 cups of cooked corn Salt and pepper |

Wilt bacon (cook slightly) in large pot. Add butter and melt. Add onions and wilt on low heat for 10 minutes. Add stock and potatoes. Cook on low until tender. Add half and Half and cooked corn. Cook 5 -7 minutes. Add diced red pepper and scallions. Cook for 5 minutes, no more. Sprinkle with cilantro to serve. Do not allow to boil at any time.
