Cream of Potato Soup

Cream of Potato Soup

4 large potatoes
4 medium onions
2 cans of chicken broth
2 cans of water
Ground pepper
Salt, to taste
one 8 ounce package of cream cheese
2 tablespoons of butter, melted

Peel and cut up potatoes. Chop onions and cook in butter just until clear and soft. Put potatoes in liquid and bring to a boil. Add onions, cooked in butter. Add seasoning. When potatoes are done, put the soup in a blender, a little at a time, to puree it, adding chunks of the cream cheese as you go along until all the soup and cheese have been blended. Chives or parsley are good garnishes.
