| | Italian Minestrone
6 slices of bacon, finely diced 1 large onion, chopped 2 carrots, diced 1/2 pound (1 1/2 cups) of string beans, cut up 1 small head of cauliflower, separated 1/4 pound of ham, cut into strips one 10 ounce package of frozen lima beans 2 quarts of beef bouillon 2 medium zucchini, chopped 1 pound of spinach, finely chopped 1/4 pound of spaghetti, broken into 2inch pieces 2 tablespoons of chopped parsley 1 teaspoon of salt a dash of black pepper Grated Parmesan cheese
Cook bacon until crisp in large heavy saucepot. remove bacon; pour off drippings, returning 3 tablespoons o to saucepot. Sauté onion until slightly transparent.
Add carrots, string beans, cauliflower, ham, lima beans and bouillon. Cook over medium heat until vegetables are tender, about 30 minutes. Add remaining ingredients and cook until spaghetti is done, about 8 - 10 minutes. Serve with grated Parmesan cheese. 12 servings |
