Wild Rice And Spam

1 can of Spam luncheon meat
2 cups of cooked wild rice
1/2 cup of chopped carrots
1/2 cup of chopped pecans
1 medium Yellow pepper; chopped
1/2 cup of raisins
Lettuce cups, optional
SHERRY CHIVE VINAIGRETTE
1/3 cup of  Oil
2 tablespoon of Sherry
1 Garlic clove; peeled
1 tablespoon of chopped parsley
1/3 cup of snipped chives
1/4 teaspoon of freshly-ground black pepper

Combine the Spam, cooked rice, carrots, pecans, yellow pepper, and raisins. Cover and refrigerate the mixture for four hours or overnight. Serve in lettuce cups if desired. For the vinaigrette: Combine all ingredients in a food processor and blend until very well minced.
