Compota De Peras (Pear Compote)
2 pounds of pears 1/2 pound of sugar 2 cups of water 1 cinnamon stick (3 inches) grated zest of 1/2 lemon
Peel and core the pears. Place in pot with remaining ingredients and bring to a boil. Cook 10-15 minutes, until the pears are very soft but still hold their shape. Serve warm or at room temperature with some of the cooking syrup. Yield: 4-6 servings
