Pear Sweet Potato Casserole

Pear Sweet Potato Casserole

one 16 ounce can of per halves, undrained
3 cups of mashed cooked sweet potatoes, about 4 medium
1/4 cup of butter or margarine, melted and divided
3 tablespoons of brown sugar
1/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
2 tablespoons of honey
1 teaspoon of grated orange rind
one 16 ounce can of whole berry cranberry sauce

Drain the pear halves, reserving syrup, set pear halves aside. Combine the 2 tablespoons of pear syrup, sweet potatoes, 3 tablespoons of butter, brown sugar, salt, and nutmeg, beat at medium speed of an electric mixer until light. Spoon into a greased shallow 1 1/2 quart casserole. Arrange pear halves, cut side up, over potatoes. Combine honey, remaining 1 tablespoon of butter, and orange rind in a small saucepan, bring to a boil and drizzle half of honey mixture over pears. Bake uncovered at 350ºF.  for 30 minutes. Drizzle remaining half of honey mixture over pears and bake casserole an additional 15 minutes. Before serving, fill each pear half with cranberry sauce. 6 servings
