| Barbara Billingsley's "Sweet Potato Casserole"
4 pounds of cooked yams
1/2 cup of butter, melted
3 Eggs, slightly beaten
2/3 cup of orange juice
1/3 cup of brown sugar, packed
1/4 cup of brandy
1 tablespoon of grated lemon peel
1 teaspoon of cinnamon
1/2 teaspoon of salt
Beat cooked yams with electric mixer, adding melted butter - add remaining ingredients and beat until smooth - butter a 2 quart casserole and spoon in the mixture - bake at 350ºF. for 45 minutes or until set.
